1In a small frying pan over medium heat add olive oil, peppers, pinch of salt and pepper.
2Fry for 8-10 minutes.
3In a small bowl add eggs, pinch of salt and pepper and beat until well blended.
4When peppers are nicely browned add the eggs to the frying pan. Be careful not to burn the eggs.
5You can add cheese as an option and serve on toasted Italian rolls.
