1Preheat oven to 400°.
2Line 12 muffin tins with paper baking cups.
3In medium bowl, combine dry ingredients: flour, sugar, baking powder and salt; mix well.
4Add wet ingredients in a small bowl: beat egg, stir in milk, oil and vanilla until thoroughly mixed; stir in pears.
5Add wet ingredients to dry ingredients; stir just until combined and spoon batter into baking cups.
6Bake for 15 to 20 minutes or until muffins are golden brown and toothpick inserted in center comes out clean.
Great eaten alone or with a scoop of ice cream…enjoy!
