Recipe by Chef Jacquie
2 cups sugar
3/4 cup vegetable oil
3/4 cup Hershey’s cocoa powder
2 teaspoons vanilla extract
2-1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1In a large mixing bowl add sugar and oil.
2With hand held mixer, mix well.
3Add cocoa and blend well.
4Beat in eggs and vanilla.
5In another bowl, combine flour, baking powder and salt.
6Add flour mixture to cocoa mixture and blend well.
7Cover and chill for 6 hours.
8When ready to bake, preheat oven to 350 degrees.
9Shape dough into 1″ balls.
10Roll in confectioners’ sugar.
11Place about two inches apart on a greased cookie sheet.
12Bake 10-12 minutes or until almost no indentation remains when touched in center. Remove from cookie sheet to wire rack and cool completely.
